General Tso’s Chicken


1¼ cup brown rice

1 Tbsp cornstarch
2 cloves pressed garlic
2 tsp ginger
3 Tbsp light-brown sugar 
2 Tbsp soy sauce
1/8-¼ tsp red pepper flakes
1 lb. snow peas 

2 large egg whites
3 Tbsp cornstarch
Salt and pepper
1 lb. chicken in 1 inch chunks
2 Tbsp sesame oil


1) Cook rice.
2) Combine 1 Tbsp cornstarch and ½ cup water, garlic, ginger, sugar, soy sauce, pepper flakes, and snow peas.
3) In a separate bowl, whisk egg whites and remaining 3 Tbsp cornstarch, ½ tsp salt and pepper. Add chicken and toss to coat.
4) In a large nonstick skillet heat 1 Tbsp oil over med-hi heat. Cook half of the coated chicken until golden brown. Transfer to a plate and then repeat with remaining oil and chicken.
5) Put snow pea mix into skillet and cover. Cook until peas are tender and sauce has thickened, 3-5 minutes.
6) Return chicken to skillet, toss with sauce and serve over rice.
