Crustless Spinach Quiche


10 oz. package frozen spinach, defrosted and well drained.
6 eggs 1 cup cottage cheese
2 Tbsp. minced onion ½ cup grated parmesan cheese
1/8 tsp. nutmeg ½ tsp seasoned salt
Pepper paprika


Preheat oven to 375º. Grease a 9 inch pie pan or an 8 inch square baking dish. Thaw spinach and drain well. Squeeze it in a paper towel to remove excess moisture if needed. In a blender, combine the eggs and cottage cheese on medium speed until well blended. Or you can beat with a wire whisk. Stir in the parmesan cheese, nutmeg, salt, and pepper. Then mix in the spinach until everything is distributed evenly. Pour into dish and lightly sprinkle with paprika. Bake 40-50 minutes or until the center is set.
