Roasted Pork and Vegetables
3 medium baking potatoes cut to 1 in. chunks
3 medium zucchini cut into 1 in. thick rounds
2 medium onions sliced into ½ inch wedges
5 garlic cloves peeled and smashed
Rosemary, salt and pepper
2¼ lbs pork tender loin roast
Preheat oven to 450º. On large baking sheet, lightly drizzle veggies with olive oil and toss with garlic, rosemary, salt and pepper. Rub pork with olive oil, salt and pepper, and any other herbs desired. Place pork at the center of the pan. Roast, tossing veggies occasionally until a meat thermometer reads 150º. 35-40 minutes. Let pork rest 5 minutes, then slice thin and serve with veggies.
