Spicy Chicken Tortilla Soup

2-3 chicken breasts
salt and pepper to taste
1 med onion diced
1 Tblsp minced garlic
1 can tomato sauce
1 can  diced stewed tomatoes
1/2 diced jalapeno ( you can use the entire one if you like it hot)
chopped avocado
chopped cilantro
Cook the chicken in oil. When done add the onion, garlic salt and pepper. Saute until you feel happy with it. Add in tomato sauce and stewed tomatoes add a can of water too. Boil until you are happy with it. Take out chicken and chop or shred it. Add back into soup and add in jalapeno, avocado and cilantro. That is it.
Warm up tortillas and serve with soup. Add shredded cheese to soup before serving. I like monterey jack. You can top with a dab of sour cream to it as well.
