Pork Barbacoa

 2 ½ - 3 ½ Pork Loin roast
 ½ cup Brown sugar
 ½ cup Worcestershire sauce
 ½ tsp Dried Oregano
 ½ tsp Powdered Ginger
 1 tsp Salt
 1 tsp Dry Chili powder
 1 tsp Garlic powder
 2 Tbl Dried Minced Onion
(all of the dry ingredients I purchase at Winco in the bins section, it is so much cheaper so you don't have to purchase an entire bottle of each one if you don't already have it on hand.)

Cook all ingredients in a crockpot for approx. 4 hrs on high. When done, shred the pork, add 1 can of red Enchilada sauce & between ¼ - ½ cup brown sugar and mix into pork. I let it sit for at least 30min - 1 hour on low after adding enchilada sauce so it is nice and moist prior to serving. This makes great BBQ Pork sliders too!
