Title: Homemade Yogurt
Description:
Basic yogurt that is easy and delicious. Must use an
instant read thermometer. The required temperatures are absolutely
exact!!!
Ingredients:
6 cups whole milk (or lowfat or nonfat although not as good!) 1/2 c. powdered milk (Morning Moo is my favorite) 2 envelopes unflavored gelatin 1 tsp vanilla 1/4 cup sugar or 2 Tbsp honey 1 cup live culture yogurt, at room temp.
Directions:
1. Stir milk, powdered milk, 2 Tbsp gelatin together in
large saucepan or pot. Using a wire whisk, stir these ingredients and
heat to 170 degrees. 2. Remove from heat and place pan into a sink
of cold water with ice cubes in the water. Stir in honey or sugar and
vanilla. With wire whisk, keep stirring until temperature is down to
88 degrees or less. (hotter will kill the live cultures!) Stir in the
cup of yogurt using wire whisk. When smooth, pour into yogurt maker.
The yogurt maker is set to keep the appropriate temperature. (Mine is a
Yogourmet brand). Leave mixture in the yogurt maker for 12 to 15
hours (I let it cook overnight). Remove and place in glass container
and refrigerate. Put 1 cup away seperately in an airtight container
for the next batch of yogurt. The live cultures will be good for about
3 weeks in the refrigerator if container is no opened to air. If
needed, however, just buy another small container of yogurt containing
live cultures and begin again.
